Mango Salsa

I used to have an orange cat named Mango. He was fat. Not pleasantly plump. Not squidgy around the edges. Not packing a few extra holiday pounds. He was legitimately, eight days a week, absolutely, all the time FAT. And I liked it. If I was feeling regretful for eating three cinnamon rolls all by myself right before a trip to the beach, I could look at Mango and think, “I look great. Bring on the two piece. And another cinnamon roll”

He really was a good cat too. One day we found a rabbit and took him in as our own. We were a little nervous to introduce him to Mango. We had, after all, seen our fair share of Animal Planet specials and knew that cute, furry little animals don’t always fare too well in the presence of hungry feline predators. But Mango wasn’t a predator, was he? The most hunting we’d ever seen him do was every Christmas morning when he’d slink on over to our coffee table and hook oysters off the serving platter while we were all too preoccupied with our presents to scold him. Surely he wouldn’t devour a harmless little rabbit. Especially with such an unoffending name as Mr. Bunny, would he?

Of course not. When we let Mr. Bunny down and he hopped on over to Mango for the first time, nose twitching, tail bobbing, probably too dense to even think about being scared, Mango simply looked at him, yawned, and sauntered off to find his food dish.

11.11.2010_mangosalsaAnyway, enough about Mango. Let’s talk about mangoes. They make an absolutely delicious summertime salsa. It’s easy to make, too. Right up my alley. This one’s for you, Mango.

11.11.2010_mangosalsa2All you do is chop up the mangoes, peppers and red onions, remove the seeds of the green chilies and chop those up too (nice and small). Peel, segment and chop up a lime, add some finely chopped cilantro and extra juice (optional), and mix it all together.

That’s it!

Hope you like it. You can enjoy it with chips, or get a little fancy and put it on some chicken. It’s great either way. A little sweet, a little spicy. Perfect.


  • 2 mangoes, diced
  • 1/2 red bell pepper, finely diced
  • 1/2 orange bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 2 green chilies, seeded and finely diced
  • 1 lime, peeled, segmented and finely chopped
  • 1 small handful of fresh cilantro leaves, finely chopped


  1. Mix everything together in a bowl
  2. If needed, add additional fresh lime juice to moisten
  3. Enjoy!
