Pistachio and Mint Pesto

Perhaps Snoop Dogg is to blame. Or Psy. Or maybe I’m just a sucker for a memorable advertising campaign. Whatever the reason, I recently rediscovered my love for pistachios and in the past week alone I’ve managed to snack my way through an entire bag. (Oops.)

So since I’m on this pistachio-eating kick, I thought I’d share this super-simple recipe: pistachio and mint pesto. My mom made it last weekend while I was visiting and it was gooooooood. We had it on chicken sandwiches (I’ll post the recipe sometime soon) but this pesto would be just as tasty with roasted tomatoes on toast, on a poached egg or just straight off the spatula. Don’t judge. We’ve all been there.

Here’s how to make it:

PistachioMintPesto01Gather your ingredients: pistachios, fresh mint, garlic, Parmesan cheese and olive oil.

  • 1/2 cup pistachio nuts
  • 1/2 cup mint leaves
  • 2 cloves garlic, crushed
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup extra virgin olive oil
  1. Blend pistachios, mint, garlic, Parmesan cheese and olive oil until finely chopped
  2. Eat
  3. Smile

  1. This sounds good! I have some mint growing in a glass of water on my window sill and it’s waiting to be transplanted outdoors. I can’t wait to try your recipe!
